Pumpkin season means Pumpkin Waffles and I am not apologetic about it one bit!!

Waffles have become a staple over here at our home and I don’t see that changing any time soon, but these are waffles you can food a good about having every weekend, I assure you. They are made with real food ingredients and taste so so yummy since they are HOMEMADE and made without any natural flavors or preservatives. The best is part is being able to top with your favorite toppings. We like, hemp hearts, butter, cinnamon, raw nuts and fresh fruit. YUM!

You wil need:

Dairy free milk of choice

Organic Pumpkin Puree

egg or flax egg

Gluten free organic oat flour (you can also use oat bran)

cinnamon

pumpkin pie spice

salt

baking soda

raw honey

The recipe:

Pumpkin Oat Flour Waffles:

1 cup dairy free milk

1/2-3/4 cup pumpkin puree

1 flax egg ( 1 tbsp of water mixed with 3 tbsp of water) or 1 pasture raised egg

2 cups of organic gluten free oats (or oat bran)

1/2 tsp cinnamon

1 tsp pumpkin spice

1/2 tsp salt

1/2 tsp baking soda

1-2 tbsp raw honey or pure maple syrup

Instructions:

  1. Add all ingredients to a high speed blender until smooth.
  2. Pour batter into your waffle maker (about 1/4 cup for bigger waffles do 1/2 cup)
  3. Once waffle maker lets you know they are ready, remove and add to a toaster oven or oven at 250 to keep warm and crisp.
  4. Enjoy with your favorite toppings.
