Attention muffin lovers, these Mini Paleo Banana Chocolate Chip Muffins are calling your name! Toss out those Entenmenns mini bites because you no longer have an excuse to buy them and say hello to your replacement! These muffins are so much better than the store bought ones and even more delicious! Better yet, they are made with REAL and CLEAN ingredients and they are not at all difficult to make. They are also gluten-free, dairy-free and made without refined sugar (except for the dark chocolate chips).

What makes this recipe gluten-free is the Paleo Flour I used to make them. This flour is made up of blanched almonds, cassava flour and coconut and can be swapped 1:1 for any all purpose flour. This was my first time using it, and I will say that I really liked it.

This recipe does give you the option to use coconut oil for a dairy free option or you could use grass-fed butter, if you prefer! I have made them using both and both are delicious.

The sweetener used for this recipe is pure maple syrup. I love using natural sweeteners, especially in my baked goods. You could easily swap raw honey in place of the maple syrup, if you prefer. FYI- I haven’t tried a granulated sugar in place of the maple syrup*.

  • pure maple syrup
  • ripe banana
  • vanilla extract 
  • refined coconut oil or grass-fed butter (not paleo)
  • dairy free dark chocolate chips

Recipe:

Ingredients:

1½ cups @kingarthurbaking paleo flour
1 teaspoon baking soda
¼ teaspoon aluminum free baking powder
½ teaspoon sea salt
@vitalfarms pasture raised eggs
½ cup unsweetened apple sauce
1/4 cup pure maple syrup
1 ripe banana, mashed
1 tsp vanilla extract 
⅓ cup refined coconut oil or grass-fed butter (not paleo), melted
1/2 cup dairy free dark chocolate chips 

Instructions:

Preheat the oven to 350 degrees.
Line a mini muffin pan with liners or grease with coconut oil.
In a large bowl, add your dry ingredients and mix to combine.
In another large bowl, mix together the wet ingredients. Slowly add the dry ingredients to the wet and mix until just combined. Fold in your chocolate chips. 
Scoop your batter into your lines muffin tray and fill until ¾ way full. Top with a few extra chocolate chips to look pretty! 
Place in the oven and bake for 10-12 minutes or until toothpick comes out clean.
Let muffins sit for about 10 minutes before you remove from muffin tin.
