What’s more cozy, nourishing and good for the soul other than a bowl of homemade chicken soup? 🥣🥕🧅

I felt a little under the weather, so I do what I always do… spring into action and whip up some yummy soup! 

🌱Chicken soup for the soul: 
1 whole chicken, preferably organic and pasture raised (4lbs) 
1 yellow onion
5-6 carrots
Handful of celery 
1 head of garlic 
2 bay leaves 
1/2 tbsp raw ginger, grated 
1 tsp turmeric 
1-2 tbsp salt 
1-2 tbsp pepper 
Freeze dried parsley 
Additional spices as preferred 
Enough water to cover chicken 

🌱Remove the innards from the chicken and rinse the cavity. Place the whole chicken in soup pot. 

Dice onions, carrots and celery and place in the soup pot. Cut a head of garlic and place into the pot. Add in bay leaf and spices. 

Fill your pot with water making sure chicken is fully submerged. 

Bring to a boil, reduce heat to low simmer and cook for about 2 hrs or until chicken is tender and broth is flavorful. 

Using tongs, remove chicken onto a plate to shred and add back into the pot. 

Taste broth and add more seasoning if needed.

Add noddles if preferred, otherwise enjoy as is!
