
If you know me by now, you probably know that I am sucker for a fresh baked chocolate chip cookie and also one that is free of gluten, dairy and refined-sugars. This weekend we were having family over dinner, so I figured it was the perfect time to make these insanely delicious, chewy and chocolaty, 6 ingredient, FLOUR-FREE ALMOND BUTTER CHOCOLATE CHIP COOKIES! They turned out to be a real crowd pleaser, as both the children and the adults were going crazy over them! They could not believe they had no butter, flour or refined- sugar in them… it call that a SCORE!!! I will warn you thought, they make it pretty difficult to maintain portion control over while eating them!
I will say, I really don’t miss eating traditional chocolate chip cookies anymore. After years of baking with natural sugars instead of refined white sugar, as well as gluten free flours in place of white/wheat flours, my palette has really made a shift. That is one of the best part about eating cleaner and refining your palette. Overtime, you will likely find that you will crave traditional chocolate chip cookies and/or other sweets less and less and that they will become noticeably sweeter than they ever had been before!
Another reason I love these cookies so much are because they ares to stinking simple to make and require only 6 ingredients, as I mentioned above! You can also mix everything in the same bowl, which also helps with the cleanup.
Now let’s talk about the few ingredients you will need to make these babies:
- natural creamy almond butter
- pasture-raised egg
- coconut sugar
- vanilla extract
- baking soda
- @enjoylifefoods dairy free choc chips
- Optional- flaky sea salt to sprinkle on top

Recipe:
Ingredients:
- 1 cup natural creamy almond butter (or nut butter of choice)
- 1 pasture-raised egg, sub flax egg for vegan
- 3/4 cup coconut sugar
- 1/2 tsp vanilla extract
- 1 tsp baking soda
- 1 cup @enjoylifefoods dairy free choc chips
- Optional- flaky sea salt to sprinkle on top
Instructions:
1. Preheat oven to 350 F. Lime baking tray with parchment paper.
2. In a medium bowl, whisk your egg lightly. Then add your almond butter, coconut sugar, vanilla extract and baking soda. Mix everything together to well incorporated. Fold in your chocolate chips.
3. Scoop cookies into your baking tray using about a tbsp. Flatten the cookies out before baking.
4. Bake for 12-13 minutes. Don’t overtake them. They will harden as they cool. Let them cool for about 3 minutes before transferring them to a cooking rack. .
