The most delicious Date and Peanut Butter Cookies you didn’t know you needed until now…

These cookies are simple, yet taste delicious and are made using ingredients you more than likely already have in your kitchen!

I also love the fact that these cookies are sweetened using dates and no other sweetener, thank you Mother Nature!

Give these cookies a try if you are a classic peanut butter cookie lover and are looking for healthier- version!

Recipe:
2/3 cup soft dates, pitted (soak dates in warm water for 10 minutes to soften)
3 tbsp non-dairy milk 
1/3 cup natural organic peanut butter (or nut butter of choice)
½ tsp salt
1 tsp vanilla
2/3 cup gluten free rolled oats, blended into flour 
1 tsp baking powder
optional toppings- melted dark chocolate, flaky sea salt or raw peanuts/nuts of choice

Instructions:
1. Preheat to 350 
2. Add dates, non-dairy milk, peanut butter, salt and vanilla into a food processor and blend until smooth.
3. Add in the blended oats and baking powder and blend until a dough forms. Scrape down the sides of the food processor as needed. 
4. Scoop out 1 heaping tbsp and roll them into balls. Flatten them with a back of the fork and top with toppings of choice. Bake for 15 minutes.
