Happy Monday and happy one month left of my favorite time of year, Summertime! I am going to assume that everyone enjoys all of the fresh produce that is in season as much as I do?? You will never not see my grocery cart filled to the brim with all of my faves (i.e. cherries, berries, peaches, nectarines, mangos, and watermelon). And the best part is finding fun ways to make yummy treats with all of them! 

Now most of the time, my Summertime recipes will include lighter and cooler meals, but there is something so sweet and full filling about starting my mornings off with a warm bowl of my Creamy Blueberry and Nectarine Oats, that it’s worth making an exception! 

One of the things I love most about this dish is how simple and quick it is to make. It only takes about 10 mins from start to finish. It is a hearty and healthy way to start off your day and requires little effort, which is something most people are in need of. So if you are looking for a meal to keep you full for a few hours, this recipe is definitely for you!

One thing that gets me is when people assume that eating healthy means your food will be super boring and lack in flavor! Um, if this were the case you would never see me eating healthy then! I looooooove flavor! So for me, taking a simple recipe from basic to delicious, has become my area of expertise! This is such an easy way for me to ensure that I am making my meals more well rounded and as nutrient dense as possible. And for this recipe, it’s not not only loaded with some yummy toppings but it also packs a big nutrient punch, so that is what we call SUCCESS my friends! 

As I mentioned, these oats are loaded with nutrients. For starters, oats are nutrient powerhouses. They are loaded with fiber, help stabilize blood sugar, can lower cholesterol and also contain a bit of protein. Next, I added ground flax to them because they don’t change the texture or taste and they also add fiber, omega 3’s and other essential nutrients. I also added cinnamon. Cinnamon is great for inflammation, lowering blood sugar, and can be used as a sugar replacement. Another ingredient I added was nut butter (I like to use almond or peanut butter for this recipe but feel free to use any you prefer). It not only makes them more creamy, but it also adds protein and healthy fats. Lastly, I topped them off with a diced nectarine and some fresh blueberries (for the the little ones, chop the fruit into baby friendly pieces).

Another reason to love these creamy oats is because of the endless options you have for fruit combinations! For example, you can choose a Blueberry-Nectarine combo, a Blueberry-Strawberry combo or even a Blueberry-Mango combo and they all would turn out fantastic! I promise you, your palate will have a flavor explosion and you can thank me for it later!!!

Recipe:

1/2 c of organic rolled oats (make sure if gluten free to buy oats that say- gluten free)  

1 c of filtered water

1 tsp of cinnamon

1 tbsp of ground flax

1/2 diced nectarine or diced strawberries

1/4 c of blueberries

1 tbsp of raw almond butter

optional 1 tbsp of maple syrup or raw honey 

*use all organic ingredients if possible  

Instructions:

  1. Bring rolled oats and water to a boil. Stir once you get to a boil for about 1 min and then turn down to low. 
  2. Cook on low for up to 3 mins, stirring frequently (otherwise the oats will stick) until they are a creamy texture. 
  3. Pour into a bowl and then stir in your flax and cinnamon.
  4. Top with fruit and drizzle on nut butter.
  5. Enjoy!
