With Fall quickly approaching, I have been really getting excited about all of the Apple Cinnamon and Pumpkin Spice recipes I want to make! Now that I am officially living back home in South Florida, it is a slightly different Fall experience than I’ve been used to the last 3 years, having lived in Northern Alabama. I will not let this warm weather damper my enthusiasm for Fall! I’m just going to imagine that when I’m eating these Creamy Apple Cinnamon Oats during breakfast, that the leaves are changing colors and that there is a cool, crisp, breeze in the air! 

Ok, now back to reality…

These oats are really a great choice for breakfast, no matter what the weather is outside! They are super creamy, and the cinnamon really adds the perfect flavor, when paired with apples! I also like adding ground flax to my oatmeal since it doesn’t change the flavor or texture. Lastly, I topped it off with walnuts and a drizzle of almond butter! Keep in mind, you could always add some honey or maple syrup to sweeten it up if you like things on the sweeter side! I personally don’t like my oats to be too sweet and I feel the fresh fruit, cinnamon and nut butter are just enough!

As I mentioned above, this oatmeal makes a great breakfast option. It is packed with fiber, protein, and other nutrients that will help to keep you feeling full for a few hours. Let’s see some of the nutritionally benefits: 

Oats-  A great source of carbs and fiber. They are also loaded with vitamins, minerals and antioxidants. They have also been linked to lowering cholesterol and helping improve blood sugar control. Overall, they are a very nutrient dense food.

Ground flax- They are high in omega 3’s, contain fiber and antioxidants.

Cinnamon- Well known for its anti-inflammatory properties as well as its blood sugar stabilizing properties.

Almond butter – High in protein and contains healthy monounsaturated fat that are associated with lowering our chances of heart disease.

Apples– They are extremely high in antioxidants and fiber and also known to be great for your heart. An apple a day keeps the doctor away, right??

Walnuts– They provide healthy fats, fiber, vitamins and minerals. Also are well known for their anti-inflammatory properties.

As you have just read, these oats pack a huge nutritional punch, hence the reason that oatmeal is one of my breakfast go-to’s.

Recipe:

Serving size: 2

1 cup of organic rolled oats (If gluten free, make sure to get gluten free)

2 cups of filtered water

1 organic chopped red apple of choice, pealed *optional

1 tbsp of organic ground cinnamon

1 tbsp of ground flax

1 spoonful of almond butter (optional)

a handful of raw walnuts (optional)

1 tbsp of raw honey or pure maple syrup

Instructions:

  1. Place water, oats, chopped apple and cinnamon into a medium saucepan, and bring to a boil over high heat.
  2. Once it starts to boil, stir the oats for about 1 minute and then turn it down to low. Continue to stir frequently for a few minutes until it is a creamy consistency.
  3. Serve in a bowl and top with nuts, almond butter and sweetener (if desired)
  4. Enjoy!
