
One of my favorite things to add to a smoothie bowl, yogurt, or simply enjoy with some homemade nut milk is a delicious chunky granola, but sadly not all granola is considered equal. The majority of store bought brands contain too much sugar, natural flavors, and preservatives, which quite frankly are ingredients that don’t belong in my granola. For those reasons, I decided to make my own Chunky Almond Butter Granola, and boy was it yummy! It was chunky and crunchy, just the way I prefer my granola!
Surprisingly, not only was extremely easy to make but the flavor was so much better than any I’ve gotten from the store. And for the fun part, you can tailor it specifically to your liking, which was somethjng I really enjoyed!
The ingredients you will need to make this recipe are the following:
- organic rolled oats (gluten free if needed)
- almond flour
- ground flax
- cinnamon
- Himalayan salt
- chopped raw pecans
- chopped raw walnuts
- raw whole almonds
- hemp seeds
- pure maple syrup or raw honey
- natural almond butter
- coconut oil
- vanilla extract

Ingredients:
Dry ingredients:
2 cups organic rolled oats (gluten free if needed)
1/2 c almond flour
2 tbsp ground flax
1 1/2 tsp cinnamon
1/2 tsp Himalayan salt
1/2 c chopped raw pecans
1/2 c chopped raw walnuts
3/4 c raw whole almonds
1 tbsp hemp seeds
Wet ingredients:
1/3 or 1/2 c pure maple syrup(depending on preference)
1/4 c natural almond butter
2 tbsp coconut oil, melted
1 tbsp vanilla extract
Instructions:
Preheat oven to 300 degrees. Line a baking sheet with parchment paper and set aside.
In a large bowl, combine all of your dry ingredients until well incorporated.
In a small bowl melt your coconut oil, and almond butter and stir until combined. (Use microwave or small saucepan)
Stir in your maple syrup and vanilla.
Add your wet ingredients to your dry ingredients until it is all fully incorporated. You can use your hands if you need to!
Spread your granola on your baking tray in a single layer.
Bake for 20 minutes and then gently stir. Place back in the oven for another 15 mins or so until your granola has started to brown.
Let your granola cool completely until it hardens. This will help ensure it stays chunky and solidifies.
Store in a seal proof container. Best used within 7-10 days.
