Are you looking for a delicious and healthy holiday cookie, then I got you covered? Do you love thin mint cookies, then I also got you covered. These incredibly tasty Chocolate Chocolate Chip Mint Cookies are going to bow you away. They are also gluten-free, dairy-free and refined-sugar-free but you’d never even know it!

Now I will say that this cookies are not overly sweet, which I actually prefer, however, you can choose to increase the amount of coconut sugar in the recipe if you prefer your mint cookies on the sweeter side.

We made these last weekend with my sister-in-law and the kids and they were a hit. Oh and I highly recommend dunking these babies into your favorite milk of choice, this really is the icing on the cake.

The ingredients you will need to make these cookies are:

  • egg 
  • coconut sugar
  • refined coconut oil
  • natural almond butter 
  • peppermint extract 
  • blanched almond flour 
  • cacao powder or unsweetened cocoa powder 
  • baking soda
  • Pinch of salt 
  • @hukitchen dark chocolate chips

Recipe:

Ingredients:

1 egg 
1/2 c coconut sugar (3/4 c if your prefer yours sweeter)
1/4 c refined coconut oil, melted then cooled 
1/4 c natural almond butter 
2 tsp peppermint extract 
3/4 c blanched almond flour 
1/2 cacao powder or unsweetened cocoa powder 
1 tsp baking soda
Pinch of salt 
1/2 cup @hukitchen dark chocolate chips 

Chocolate drizzle-optional 
1/4 cup @hukitchen dark chocolate chips 
1/4 tsp coconut oil 

Instructions:

Preheat oven to 350 F. Line a cookie sheet with parchment paper and set aside. 
In a lg bowl, whisk together your egg, coconut sugar, coconut oil and almond extract together. 
Next, add in your almond flour, cacao powder, baking soda and salt. And blend until fully combined. *your batter will be thick like brownie batter* 
Fold in your chocolate chips. 
Scoop your cookie batter onto you baking sheet. Flatten out your cookies by pressing them down lightly. 
Bake for about 13 minutes. 
While cookies are baking, add your 1/4 cup chocolate chips and coconut oil into a small bowl. Place in the microwave at 30 sec intervals until melted. 
Once cookies are done, let them cool before adding your chocolate drizzle.
