Are you looking for a yummy cookie recipe to try this weekend? If you are, then look no further. Let me introduce you to these incredibly delicious, Chocolate Chip Pecan Cashew Butter Cookies. These cookies are so chewy and nutty and are fun way to spruce up your regular old chocolate chip cookie recipe!

They are flour-free, dairy-free, refined-sugar-free and are made using just a few ingredients:

  • cashew butter (or nut butter of choice) 
  • coconut sugar 
  • vanilla extract
  • baking soda 
  • pasture-raised egg
  • @enjoylifefoods  dairy-free dark chocolate chips 
  • chopped pecans 

These cookies taste so decadent that you won’t able to get over just how incredibly simple they are to make.

Recipe:

Ingredients: 
1 cup cashew butter (or nut butter of choice) 
3/4 c coconut sugar 
1/2 tsp vanilla extract
1 tsp baking soda 
1 pasture-raised egg
1/2 c @enjoylifefoods dark chocolate chips 
1/4 c chopped pecans 

Instructions: 
Preheat oven time 350 F. Line your baking tray with parchment paper. 
In a large bowl, mix together your egg, cashew butter, sugar, vanilla and baking soda. Fold in your chocolate chips and pecans. Place dough in the fridge for about 10 minutes. 
Scoop 1 inch cookies onto baking tray and bake for about 10-12 minutes. 
Let cool for 10 minutes before eating!
