These cookies are so chewy and nutty and are fun way to spruce up your regular old chocolate chip cookie recipe!
They are flour-free, dairy-free, refined-sugar-free and are made using just a few ingredients:
- cashew butter (or nut butter of choice)
- coconut sugar
- vanilla extract
- baking soda
- pasture-raised egg
- @enjoylifefoods dairy-free dark chocolate chips
- chopped pecans
These cookies taste so decadent that you won’t able to get over just how incredibly simple they are to make.

1 cup cashew butter (or nut butter of choice)
3/4 c coconut sugar
1/2 tsp vanilla extract
1 tsp baking soda
1 pasture-raised egg
1/2 c @enjoylifefoods dark chocolate chips
1/4 c chopped pecans
Preheat oven time 350 F. Line your baking tray with parchment paper.
In a large bowl, mix together your egg, cashew butter, sugar, vanilla and baking soda. Fold in your chocolate chips and pecans. Place dough in the fridge for about 10 minutes.
Scoop 1 inch cookies onto baking tray and bake for about 10-12 minutes.
Let cool for 10 minutes before eating!
