Attention friends: If you have some ripe bananas laying around, STOP what you are doing and make these INCREDIBLE Chocolate Banana Zucchini Muffins because you will not regret it! They are not only so darn delicious, but they are also healthy, too! So far, every person who has eaten this, has asked me… are you sure these are healthy and contain clean ingredients??

With that being said, let’s talk ingredients. They are made using the following ingredients:

  • bananas
  • coconut palm sugar
  • unsweetened applesauce
  • cinnamon
  • zucchini
  • pasture-raised eggs
  • vanilla extract
  • oat flour (gluten free for those with sensitivity) 
  • unsweetened cocoa powder, or cacao powder 
  • Himalayan sea salt
  • baking soda
  • baking powder, aluminum free 
  • 1 c @enjoylifefoods dairy free choc chips

Recipe:

Ingredients:

  • 2 overripe bananas
  • 1/4-1/2 c coconut palm sugar ( I used 1/4 to cut down the sugar)
  • 1/2 c unsweetened applesauce
  • 1 tsp cinnamon
  • 1/2 lg zucchini, shredded and liquid squeezed
  • 2 pasture-raised eggs, room temp
  • 1 tsp vanilla extract
  • 1 1/2 c oat flour (gluten free for those with sensitivity) 
  • 1/4 c unsweetened cocoa powder, or cacao powder 
  • 1/4 tsp Himalayan sea salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder, aluminum free 
  • 1 c @enjoylifefoods dairy free choc chips

Instructions: 
1. Preheat oven to 375 degrees. Line muffin tins with muffin lines or oil and set aside.
2. In a large bowl, combine banana, applesauce, coconut sugar, zucchini, eggs and vanilla extract.
3. In medium bowl, combine flour, cocoa powder, salt, baking soda, baking powder, and cinnamon.
4. Add the dry mixture to wet mixture.
Fold in the chocolate chips
5. Scoop batter into muffin pan and fill cups 3/4 way full. Top the batter off with a few extra chocolate chips to make them look and pretty *
6. Bake for 18-20 minutes or until a toothpick comes out clean. Wait about 10 mins to cool and then ENJOY!
