Hey Hey! Just here to make your Friday and/or weekend a little more exciting by sharing this INSANELY delicious Apple Cinnamon Streusel Muffin recipe your way! I don’t know about you but I am sucker for anything with a crumble on top! These muffins are a guilt free treat that j think the whole family will enjoy! These babies are refined-sugarfree and can be made completely gluten-free, as well, so there’s that!

The ingredients you will need to make these muffins are:

  • refined coconut oil,
  • pure maple syrup
  • unsweetened apple sauce
  • pasture-raised eggs
  • pure vanilla extract
  • organic Fuji apple (grated then squeezed)
  • organic gluten-free oat flour
  • baking powder (aluminum Free)
  • baking soda
  • cinnamon
  • nutmeg
  • tsp salt
  • organic rolled oats
  • tbsp coconut sugar
  • grass-fed organic butter

Ingredients:

Muffin Ingredients: 
1/3 c refined coconut oil, melted and cooled 
1/3 c pure maple syrup 
3/4 c unsweetened apple sauce 
2 pasture-raised eggs 
1 1/2 tsp pure vanilla extract 
1/2 c organic red apple (grated then squeezed) 
1 1/2 c organic gluten-free oat flour 
1/4 tsp baking powder (aluminum Free) 
1/2 tsp baking soda 
1 tbsp cinnamon 
1/4 tsp nutmeg 
1/2 tsp salt 
1/2 c organic rolled oats 
1 1/2 tbsp coconut sugar 

Streusel topping:
1/3 cup oat flour, spelt flour, or gluten free flour
1/4 cup almond flour
2 tbsp coconut sugar
1 tsp cinnamon
2 1/2 tbsp cold organic butter

Directions:
Preheat oven to 350 F. Line or grease your muffin tins.

Muffins:
In a large bowl mix together your oil, maple syrup, apple sauce, eggs, vanilla and apple.

In a separate bowl, whisk together your flour, baking powder, baking soda, cinnamon, nutmeg and salt.

Combine your dry ingredients with your wet ingredients. Then fold in your rolled oats.

Add your batter to your muffin tins.

Streusel:
Combine both flours, cinnamon and coconut sugar in a small bowl.
Cut the cold butter into small cubes and add them to the dry ingredients. Using your hands, crumble the butter and the dry mixture together and set aside.
Sprinkle the streusel evenly on top of your muffin batter.

Bake for 18-22 minutes or until toothpick comes out clean.

Allow them to cool before eating!
